Sweet Potato Loaf

Sweet Potato Loaf

Ingredients (A):


Dough
High Protein Flour 300g
Milk Powder 15g
Yeast 1tsp
Castor sugar 30g
Salt 1/2tsp
Ice water 185ml
Unsalted butter 20g


Ingredients (B):


Sweet Potato Paste Filing
Sweet Potato 230g
Castor sugar 20g
Unsalted butter 15g

*1 egg yolk
*Toast Box:450g


Steps:


1. Wash and cut sweet potato into 2 cm cubes. Steam potato for 12-15 minutes, 110°c, Speed 2.

2. Remove the basket and drain the water. Insert the butterfly whisk. Place the potato into the Allda bowl and mash for 20-30 seconds, speed 3-4 or until smooth.

3. Take out potato filling, flatten potato (16cm x 16cm) and wrap with cling paper. Put aside until temperature has dropped to 37°c or below, put in chiller.

4. Put ingredients (A) except butter into Allda bowl for dough. Knead for 5 mins. Then add in butter and knead for another 2 mins.

5. Transfer the dough out onto floured surface and knead briefly to form a tight ball. Wrap and leave to prove for 35-50 mins or until doubled in size.

6. Flatten dough into 25cm x 25cm, place sweet potato filling on top of dough and wrap potato filling inside the white dough.

7. Fold the dough into vertical and roll the dough. Continue three times to fold the dough.

8. Shape into desired shape and place into toast box. Leave to prove for another 30-40 mins.

9. Preheat oven to 190°c. Slash some egg yolk (egg wash) on top of the loaf. Put loaf into oven and bake for 35 minutes.
