INGREDIENTS
*Makes 30 cookies
1 cup butter, softened
1 tsp vanilla extract
1/2 cup powdered sugar
2 1/4 cup flour
1/4 tsp salt
1 cup pecans, chopped
1/3 cup powdered sugar for dusting, as needed
DIRECTIONS
Preheat oven to 175 degrees.
Cream together butter, vanilla, and 1/2 cup of the powdered sugar. Stir in flour, pecans, and salt. Mix till well combined.
Roll dough into balls, about 1 tablespoon wide, and place on an ungreased cookie sheet.
Bake at 175 for 14-15 minutes. Do not let it brown.
Roll hot cookies in powdered sugar. Once they have cooled, roll them once more in sugar. Enjoy!
Storage instructions:
These cookies can be stored in an airtight container or in a freezer. Prior to freezing, put them into an airtight container in layers separated with wax paper. Thaw them completely before serving and roll it in powdered sugar for that touch of freshly fallen snow.
