Base Layer:
200g Glutinous Rice
100g Coconut Milk
3g Salt
2 Pandan Leaves
Top Layer:
75g Pandan Juice
35g Corn Flour
25g All Purpose Flour
2 Eggs
150g Coconut Milk
100g Sugar
INSTRUCTION
Base Layer:
Place the glutinous rice and pandan leaf into Allda basket, then place the basket into Allda bowl filled with 1 litre of water.
Cook the rice using Steam at Speed 3 for 15 minutes until semi-cooked.
Remove the basket from the bowl, loosen the glutinous rice then add in coconut milk and salt. Mix it well.
Then pour into 8" aluminium mould, compress the rice until it flatten evenly.
Top Layer:
Pour all the ingredients into Allda bowl, mix it at Speed 6 for 30 seconds.
Cook until thicken at 80°C for 3 minutes at Speed 3 without Measuring Cup.
Strain the mixture to remove any lumps.
Pour the mixture over the glutinous rice and place the mould on Allda steaming bowl.
Place the steaming bowl on top of Allda bowl filled with 1 litre of water, Steam it at Speed 2 for 35 minutes.
Set aside to cool before cutting into pieces.
